Lemon Butter Biscuits πŸ‹Β 

Welcome to the new year everyone, wishing you all a fantastic 2017!!

These biscuits are absolutely delicious, so light and fluffy perfect for a homemade gift 😊 or for yourself.

Makes 30


120g unsalted butter
100g caster sugar
1 large egg
2 lemons
200g plain flour
1/3 baking powder
1 tbsp demerara sugar


1. Beat the butter and sugar together until creamy, then add the egg and continue beating until its light and fluffy.

2. Finely zest both lemons into the bowl, then add the plain flour and baking powder. Give it a big mix.

3. It will look a bit like a cake mixture now, use a heaped teaspoon to put the biscuits onto the baking tray and finally bake in the oven for 12- 15 minutes until lightly golden.

Enjoy these delicious puffs of lemony goodness.
