Hello everyone, I hope you’ve all been keeping well! I’ve been using a lot of tinned tomatoes recently but I was really missing the really flavoursome shop brought pasta sauces. Tinned foods are very easy to accumulate and we had quite a few in the house that are often used in pasta dishes but because I was using spelt pasta I wanted a really good, rich sauce that would compliment the plainness of the spelt pasta.
Anyway, I came up with a great tomato sauce recipe that is easy to prepare, can be frozen for future use and could go well with many different cuisines. I think this sauce would also be perfect for the base of a tomato soup and overall it requires minimal effort to make. The image below is the chunky sauce before it was blended, but I would suggest leaving the sauce to cool before blending and then you’ll have a smooth consistency for a pizza base.

Recipe: Homemade Tomato Sauce
Ingredients
1 tbsp oil
1 small onion – roughly chopped
2 garlic – crushed
1 tin chopped tomatoes (500g)
2 tsp brown sugar
1/2 tsp salt
1/2 tsp basil
1/2 tsp oregano
Method
- Heat the oil in a pan on a medium heat, after a few minutes add the onions and garlic, cover with a lid and leave to soften for 2 minutes.
- Next, add the tinned tomatoes stirring well. You can also wash out the tin to get out all the sauce.
- Add the brown sugar, salt and herbs then cover with a lid and leave to simmer on a gentle heat for 7 minutes until soft.
- Leave to cool before blending for a smoother consistency.
