Oatmeal Raisin Cookies

Hello everyone, I hope your day has been well. Today’s recipe feature oats and raisins which are both tasty and popular baking ingredients. Oats are very healthy, gluten free and full of nutrients. Raisins are beneficial to the body when eaten in moderation as they are sweet and high in sugar, raisins are also high in vitamins, minerals and fibre.

These cookies are so delicious, I like to keep them in the oven long enough so that they have a little crispiness to the bite. They are perfect to eat at anytime of the day and make a great snack.

Recipe: Oatmeal Raisin Cookies (makes 34)

Ingredients

175g butter

250g demerara sugar

1 egg

4 tbsp water

1 tsp vanilla extract

300g oats

140g plain flour

Pinch of salt

1/2 tsp bicarbonate soda

Method

  • Set the oven to gas mark 6 and line to trays with baking paper.
  • In a bowl, mix the butter and sugar together, then add the egg, water and vanilla extract.
  • In a separate bowl, combine all of the dry ingredients together and slowly add to the egg mixture mixing until smooth.
  • Use a tablespoon to spoon the mixture onto the baking tray and bake in the oven for 30 minutes.
  • Leave to cool on a wire rack before eating.

Cheesy Potato Pie

Hello everyone, I hope your day has been well.

Today I have another simple side dish to make for any occasion. It is nice and cheesy with crispy edges. This pie was very tasty and is best enjoyed hot. Also, if you are a gravy fan, it would be nice to drizzle some over the top.

Recipe: Cheesy Potato Pie (serves 4)

Ingredients

6 potatoes

100g red Leicester cheese – grated

Splash of milk

1 tsp butter

1 tsp oil

50g kale

1 tsp diced onion

Method

  • Peel and dice the potatoes, wash and place in a pan of water to boil until just cooked.
  • Whilst the potatoes are cooking, heat oil in a small pan and add the onion and kale cooking for 5 minutes, then leave to cool.
  • Preheat the oven to gas mark 6.
  • Once the potatoes are cooked, pour off the water and mash with milk and butter until smooth.
  • Add the kale and cheese to the mash and mix well, spoon the mixture into an oven dish, grating more cheese on top.
  • Cook the pie in the oven for 45 minutes until the cheese has melted and gone crispy.

Red Leicester Cheese Pizza

Hi everyone, welcome back to my blog. Today’s post is one of my favourites…PIZZA!!

I always love making pizza and usually I would make a dough using yeast leaving it to rise, but occasionally I will use the recipe below for a quicker meal. Homemade pizza always tastes so good because you can add all your favourite toppings and make it just how you like. Today I added red Leicester cheese which is an English cheese similar to cheddar but has a distinctive orange colour.

Recipe: Red Leicester Cheese Pizza (makes 1 tray)

Ingredients

175g plain flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 tbsp oil

90ml water

Toppings: tomato sauce, spring onion, red Leicester cheese, kale, sweetcorn

Method

  • Preheat the oven to gas mark 5 and lightly oil an oven tray,
  • To make the dough, weigh the flour, baking powder and salt into a bowl and gradually pour in the oil and water mixing with one hand until it forms a dough.
  • Knead for 5 minutes and roll out until 1cm thickness, then place onto the oven tray.
  • Spread the tomato sauce then add the onion, corn, kale and cheese.
  • Place in the oven for 30 minutes until the dough is cooked and serve.

Chocolate Crêpe

Hello everyone, thanks for stopping by my blog.

A crêpe is a thin pancake with its origin in France. Ingredients include flour, milk and eggs, and is usually eaten at any temperature. Of all the pancakes I’ve made, I never thought about making chocolate pancakes. I usually go for the simple crepe with lemon and sugar. These pancakes are super simple to make and they taste so good. The mixture was quite runny so be careful not to make them too thin because they will be crispy. These chocolate crepes are not too sweet and can be eaten for breakfast or dessert. Also, you can add a variety of toppings such as maple syrup, cream or fresh berries.

Recipe: Chocolate Pancakes (serves 2)

Ingredients

50g plain flour

10g cocoa powder

25g caster sugar

1/2 tsp baking powder

Pinch of salt

140ml milk

1 egg

Method

  • Sieve the flour, cocoa powder, sugar, baking powder and salt into a bowl.
  • Whisk the milk and egg together and gradually pour into the flour mixture, whisk well until it forms a runny, smooth batter.
  • leave this to rest for 30 minutes.
  • Heat oil in a pan, use a paper towel to soak up the excess oil.
  • Whisk the crêpe batter again and pour an even layer into the hot frying pan.
  • Cook on both sides for a few minutes until cooked right through.
  • Serve warm with your favourite toppings.

Hasselback Potatoes

Hello everyone, I hope you are well.

I love that potatoes are such a versatile ingredient and you can use them for so many dishes. The hassleback was something I’d seen a while ago and I decided to make it today. I saw a tip online that said to cut the potatoes whilst it rests on a spoon so that you don’t cut it all the way through and that tip worked really well. I used potatoes that were quite small and they took just over an hour to cook. I ate the hasselback potatoes with cheese, baked beans and salad.

Recipe: Hasselback Potatoes (serves 1)

Ingredients

4 small potatoes

Drizzle of oil

10g butter

Sprinkle of salt, chilli and oregano

Method

  • Preheat the oven to gas mark 6
  • Wash the potatoes well, place onto a spoon and slice down the potato making sure not to cut all the way.
  • Place the potatoes onto a tray, rub a little butter over the top.
  • Add a drizzle of oil and sprinkle with salt, chilli and oregano.
  • Bake in the oven for about an hour until cooked right through.
