I’m sure I’ve shared something similar before but these kale fried dumplings taste so good, they are a twist of the classic fried dumpling with the addition of kale which provides a delicious earthy taste. This is a super simple recipe to make, it is a great side dish and perfect for dipping into curries and sauces. These dumplings aren’t normally weighed, you just get the right dough consistency to shape into round shapes and fry until golden brown. It all depends on how many you are making but a good sized handful should be enough. Although it’s a small amount, the addition of kale provides so many nutrients that help to maintain a healthy body.
Fried dumplings are a great accompaniment to many dishes and go well with a variety of ingredients. These fried dumplings have a deep golden outer layer but are super soft. Although this is a popular Jamaican side dish I have added a few ingredients that give it that little extra flavour. Usually the dumplings are fried in a dutch pot which enables the oil to be heated to a high enough temperature for cooking the dumplings (or other food items) like an alternative to a deep fryer.
Recipe: Jamaican Fried Dumpling (makes 6)
160g self raising flour
Sprinkle of salt and basil
Oil for frying
Heat some oil in a dutch pot.
Add the flour, oats, salt, and basil to a bowl and slowly pour in the water mixing to form a smooth dough. Add more flour if needed.
Shape the dough into 6 flat circles.
Once the oil is hot add 3 at a time frying for 5 minutes before turning over to fry for a further 2 minutes.
Once cooked, take out and place on a kitchen towel to drain off the excess oil.

I hope you enjoy today’s recipe, it’s quite popular in our household and commonly eaten in Jamaica, usually served with fried dumpling or rice. People make it many different ways, for example bell peppers, more tomato or garlic may be added.
Recipe: Cabbage and Saltfish (serves 8)
3 tbsp oil
1 garlic – crushed
1/2 onion – finely diced
1 tomato – finely chopped
3/4 cabbage – finely sliced
1 tsp mixed
Sprinkle of chilli powder
Sprinkle of black pepper
1 pack of cod salt fish – boil and remove bones
First thing is to prepare the vegetables and set aside on a plate.
Then wash the saltfish and boil, then wash again in cold water.
Heat the oil a pan, once hot add the onion and garlic. Cover with a lid for a few minutes until soft then add the tomato and carrot stirring well.
Add the cabbage and cover with the lid for 5 minutes then add the saltfish and mix.
Pour in the water and cover with the lid again until the cabbage is cooked.
