Minced Beef Kebabs

Hello everyone, I hope you’ve had a good day today. Today’s recipe is kebabs, I was seeing them on a lot of foods videos so I thought why not make them. I think the origin of kebab skewers are mostly from the Middle East (with other varieties around the world) and a lot of the recipes I found for inspiration were full of flavour and spices.

I had quite high hopes for these kebabs but when I was making them it was slightly stressful because I was cooking other things at the same time and when I was squashing the meat onto the skewers it was almost falling off but it all turned out okay in the end.

Minced Beef Kebab Recipe (makes 6)

Ingredients

500g minced beef

1 tsp cumin

1 tsp paprika

1 tsp salt

1/2 tsp chilli

1 tsp basil

Oil – for frying

Method

  • Place the meat into a large bowl and sprinkle in all of the seasonings, then use your hands to combine everything together and leave to marinate for a few hours.
  • Soak 6 six skewers in water.
  • Heat a little oil in a pan and then equally divide the meat into 6 and squash each piece around a skewer.
  • Place into the hot pan and cook for 3 minutes on each side. Preheat the oven to gas mark 5.
  • Once there is colour on the kebab, put it on a tray and into the oven for 10 minutes.

I’ll just have a salad

Hello everyone, welcome back to my blog. If you’ve seen my previous posts you’ll know I’ve posted quite a few salad recipes before because they are healthy, easy to make and look really colourful. Every since I was a kid we have always had salad along with our Sunday dinner and naturally I’ve always enjoyed making it. No cooking is required just the basic skills of peeling, grating and slicing. Over the years I’ve changed the way I prepare it and my current favourite is to grate and cut the salads fairly small then mix everything together. Posting earlier because it’s so warm outside and this is a great side for your dinner, especially in this UK summer heat.

Side Salad Recipe

Ingredients

Lettuce – shredded

Carrot – grated

Raddish – grated

Method

  • Take out the amount you want of each salad, depending on how many people are eating.
  • Wash everything thoroughly and prepare everything, I like to leave the lettuce to dry on a paper towel.
  • Add everything to a bowl and serve alongside your favourite meal.

Remember salads are supposed to be healthy and by adding oils, dressings, croutons and other food item makes it less nutritious overall.

Seasoned Potato Chips

Hi everyone welcome back to my blog. Today’s recipe features a very versatile vegetable….POTATOES!! You can have it fried, mashed, baked, boiled, wedges or chips, needless to say your options are endless. These chips are filling, full of flavour and go really well as a side to most dishes.

Seasoned Potato Chips recipe (makes 5 potions)

Ingredients

1 tsp paprika

1 tsp garlic powder

1/2 onion powder

1 tsp dried oregano

Pinch of chilli

1 tsp granulated sugar

1 tsp salt

1 tsp black pepper

5 large potatoes – peeled and cut into chip shapes

Oil – to drizzle potatoes

Method

  • Preheat the oven to gas mark 5 and place a large tray into the oven.
  • Mix all of the dry seasonings together in a small bowl and set aside.
  • Peel, chop and wash the potatoes. Cut them into chip shapes and place into the oven tray, drizzling with oil but not too much.
  • Next sprinkle oven the combined seasonings, mix everything together and cook in the oven for about an hour until cooked through.

Green Beans and Egg (Ejotes con Huevo)

Hi everyone. I’m sharing a quick and simple recipe today, let me know if you try it.

Recipe: Green Beans and Egg (serves 1)

Ingredients

Handful of green beans – blanched for 7 minutes

1 tsp oil

1/2 tsp garlic powder

2 eggs

Sprinkle of salt

Sprinkle of pepper

1 tsp tomato puree

Method

  • Firstly, prepare the green beans, wash and trim the ends and cut in half, then blanche in hot water for 7 minutes until just cooked and set aside to cool down.
  • Heat the oil in a pan and mix everything else together in a bowl
  • Once the pan is hot, add the egg mixture to the pan and cook on a gentle heat until cooked through.
  • Serve with rice or as a side dish.

Broccoli Wraps & Sweet Potato Fries

Hello everyone, I hope your Monday has been good! This recipe today is very similar to Sunday and if you liked that, then you’ll surely love this. It’s a similar theme but with broccoli and sweet potato fries on the side.

Recipe: Broccoli Wraps (serves 1)

Ingredients

Handful of broccoli – cut into bite sized peices

1 tbsp oil

Zest of 1/2 a lemon

1/4 tsp garlic powder

1/4 tsp salt

1/4 tsp chilli powder

Handful of sweetcorn

1/3 carrot – cut into sticks

1 wrap

Method

  • Firstly, preheat the oven to gas mark 5/6 and take out an oven tray.
  • In a bowl mix together the washed broccoli, oil, zest, garlic, salt and chilli, then place in the oven for 15-20 minutes until cooked.
  • In the meantime, prepare the corn, toast the pine nuts and slice the carrots in a separate bowl.
  • Just before the broccoli is cooked, place the tortilla wrap in the oven for a few minutes.
  • Once everything is done, place the broccoli, salad and your preferred sauce in the centre of the wrap and fold into a parcel then cut in half and enjoy.

*If you are having sweet potatoes, these can be fried whilst the broccoli is in the oven.
