Brown Sugar Spiced Shortbread

Hello everyone, I hope your week has been great.

This recipe is a spiced twist on the original and the taste is just as delightful, the good thing about mixed spices is that you get a mixture of flavours from the nutmeg, cinnamon and ginger which all complement the shortbread. Another difference is the use of brown sugar which offers a deep, rich treacly taste, not usually associated with shortbread but compliments the taste none the less.

Recipe: Brown sugar spiced shortbread (makes 30)


150g plain flour

3 1/2 tbsp dark brown soft sugar

1/2 tsp mixed spice

100g butter


  • Preheat the oven to gas mark 4 and line a tray with baking paper.
  • Mix the flour, sugar and mixed spice in a large bowl. Rub the butter until it forms crumbs. Bring together to form a smooth dough.
  • Roll out on a lightly floured surface, use a small cutter to cut out the shortbread and place on a the tray.
  • Bake in the oven for 20-25 minutes and transfer to a wire rack to cool down.

Cinnamon Spiced Biscuits

These biscuits are mini which is cute but you end up eating more 😉 when it comes to making the dough, don’t worry if it’s a little stiff because it will soften out once you start rolling.

Makes 35

175g plain flour
1 tsp mixed spices
115g unsalted butter
50g caster sugar

1. Set the oven to gas mark 4 and line two trays with parchment paper.

2. Seive the flour and spices into a large bowl, add the butter and rub into the mixture until it resembles breadcrumbs.

3. Next add the sugar and knead together to form a dough. Then role out on a floured surface to 5mm thick.

4. Use a cutter of your choice and cut into the dough placing each biscuit onto the tray. Re-roll and use up all of the dough.

5. Place both trays in the oven and bake for 10 minutes, they will still be quite pale. Put the on a wire rack to cool completely.
