Upgraded French Toast

Hello Everyone, I hope your day has been well.

So, usually whenever I make french toast I would whisk the egg, soak the bread, fry and drizzle with maple syrup. It never occurred to me to add cinnamon or vanilla extract for an upgrade of flavours. Cinnamon is such a warming, sweet spice and really compliments the taste of French Toast. Cinnamon is not an ingredient I use often but works really well in tea, baking and breakfast foods. Vanilla extract on the other hand is an essential baking ingredient that I use all the time, perfect in cakes, cookies, brownies, biscuits and ice cream. Even though it’s something small, experimenting with new ingredients and trying new foods is a great way to expand the palette and get used to a range of flavours.

Recipe: Upgraded French toast (serves 1)

Ingredients

1 tsp oil, for frying

2 eggs

1/2 tsp vanilla extract

1/3 tsp cinnamon

2 slices of bread

Drizzle of maple syrup

Method

  • Heat the oil in a frying pan.
  • In a bowl, crack 2 eggs and whisk together along with the vanilla extract and cinnamon.
  • Cut the bread in half and soak each piece in the egg mixture before adding to the pan.
  • Fry on each side for 3-4 minutes, depending on how golden you want it to be.
  • Take out once fully cooked and drizzle with a little maple syrup. I added a strawberry for decoration.

Chocolate Marble Cupcakes

Hey everyone, I hope your day has been well.

I’m posting a little late in the day but I felt like making something slightly indulgent but not too sweet and I decided on chocolate marble cupcakes. I love the combination of vanilla and chocolate together. These cupcakes are light, moist and they taste amazing. I even added a little chocolate icing on a few. Cupcakes are such a simple thing to bake and enjoyable for everyone.

Recipe: Chocolate Marble Cupcakes (makes 12)

Ingredients

125g butter

125g caster sugar

2 eggs

125g self raising flour

1/2 tsp vanilla extract

1 tbsp cocoa powder

Method

  • Preheat the oven to gar mark 5 and place 12 cupcake cakes on a tray.
  • Beat the butter and sugar together in a bowl until smooth.
  • Add the eggs one at a time mixing until well combined. Then sieve in the flour and mix.
  • Split the mixture, pouring 1/3 into a smaller bowl and mix in the cocoa powder.
  • To the larger bowl add the vanilla extract and mix well. Use a tablespoon to divide this mixture evenly between the cases.
  • Use a teaspoon to add the chocolate mixture to the centre of the cupcakes and use a cocktail stick too gently mix both mixtures. Do this until both mixture are used up.
  • Put the tray in the oven for 25 minutes until cooked right through.
  • Leave to cool before eating (or adding any toppings)

Lemon and Orange Jelly Sliced Cupcakes

Oh it’s been so long since I’ve baked something, I hate when I get busy and forget to make time to do the things I enjoy.

Ingredients
150g butter, softened
150g brown sugar
2 eggs
150g self-raising flour
3 tbsp milk

Topping
100g butter
2 tbsp honey
150g icing sugar
Lemon and orange jelly slices

Method
1. Preheat the oven to gas mark 4 and place 12 cupcake cases in a 12 hole tray.

2. Beat together the butter and brown sugar until pale and fluffy. Next add the eggs one at a time and beat.

3. Mix in the flour and the milk, divide equally between the cases and bake in the oven for 15- 20 minutes.

4. Make the topping in the meantime: just mix everything together and set aside. Once the cupcakes are done leave to cool on a wire rack.

5. Spread the topping over each cupcake and press 3 jelly slices on top 🙂

These are perfect for kids parties and any other occasion!

Uses for vanilla essential oil

The one that I have is actually blended with jojoba oil and sunflower oil but it still has that sweet vanilla scent when I use it.

Essential oils can literally be added to so many beauty products homemade or not such as:
Shampoo
Conditioner
Deodorant
Moisturiser

You can add a few drops (5-6) to your bath water for an extra relaxing bath with aromatherapy benefits 🙂 they can also be added to carrier oils if neat and used for body massaging. Essential oils can be mixed in with homemade air fresheners for a light fragrant smell.

There are actually over 90 essential oils each with there own health benefits and they are sold in many shops, this one was from Holland and Barratts for £5.99 the vanilla essential oil has a comforting scent and can reduce the thoughts of stress and anxiety through it’s soothing qualities.
